Braised Balsamic Pork Loin

6 boneless pork loin chops (4 oz)*
1 tsp garlic powder
ground black pepper to taste
2 tbsp extra virgin olive oil
1 medium onion, thinly sliced
½ cup balsamic vinegar
1 can of no salt added diced tomatoes
1 tsp dried basil
1 tsp oregano
1 tsp dried rosemary
½ tsp dried thyme
1. Season pork loins with pepper and garlic powder.
2. Heat olive oil in a medium skillet, and brown the onion and seasoned pork loins.
3. Pour tomatoes and balsamic vinegar over pork loins, and season with basil, oregano, rosemary and thyme.
4. Simmer until pork is cooked through.

*may substitute pork for chicken breasts.

Shredded BBQ Pork

2lbs – 97% Fat Free Boneless Pork Loin
15oz can of no salt tomato sauce
4 tsp Worcestershire sauce
4 tsp organic brown sugar or Splenda Brown Sugar
1 tbsp red wine vinegar
1 tsp Mrs. Dash Southwest Chipotle
1 tsp onion powder
1 tsp garlic powder
1. Place pork in crockpot or roasting pan.
2. In a small bowl, mix all remaining ingredients to make the BBQ sauce.
3. Pour sauce over top of pork.
4. Bake at 350 for 1½ hours until pork is tender.
5. Cook in crockpot  until pork is tender and falls apart.

4 oz cooked & shredded chicken
¼ cup apples, diced
¼ cup grapes, halved
¼ cup celery, diced
½ cup plain 0% Greek yogurt
2 packets of Stevia
½ cup shredded lettuce
2 Mama Lupe low carb tortilla shells
1. Mix chicken, apples, grapes, celery, yogurt and Stevia together in bowl.
2. Serve on tortillas with shredded lettuce.

4 boneless, skinless chicken breasts
½ cup black bean and corn salsa
1 tbsp Mrs. Dash Southwestern Chipotle Seasoning
½ cup fat free sour cream
¼ cup fat free cheddar cheese
4 Buena Vida Low Carb Tortilla Shells
1. Place chicken, salsa and chipotle seasoning in crockpot or roasting pan.
2. Bake in oven at 350  until chicken is tender.
3. Shred chicken and add sour cream and cheese.
4. Bake for an additional  10 minutes until cheese is melted and serve on tortilla shells.
